Chef Esther Choi

Chef and owner of mŏkbar restaurant, Esther Choi may be a New Jersey native, but due to the influence of her traditionalist Korean grandmother, she’s thoroughly steeped in the mystical food prep traditions of the Orient. Near-compulsive concentration on stilling one’s spirit; imbuing every ingredient with love; and reverence of every process in the elegant crafting of every dish. That is what Korean food is all about: the chef pouring what’s beautiful in the heart into the food for others to enjoy and be nourished by. Chef Esther was trained at the Institute of Culinary Education (ICE), and cut her professional teeth at ilili, La Esquina, and Food Network in New York before taking the acquired technological expertise and melding it with the roots of tradition and finally flinging open the doors of her own eatery.
